Traditions of Milk Culture in Buryatia

In the article the old-fashioned methods of making dairy products used by Buryats are presented. Buryats called milk «a white food», for them milk food was a sacred one. Milk is first food the man eats from his birth. Compared animal milk with human mothers milk Buryats have considered milk as a sacred thing. Our ancestry made lots of derivative products out of milk. They produced сhees, cottage chees, soure clotted milk, and wine from sour milk. Buryats have been wine-makers for centuries. Buryats have eaten meat and milk. In summer time meat has been substituted by milk. Based on their attitude psychology towards milk, and because there have been many different kinds of dairy products with high nutritional value, our ancestry has always known the proteine value of milk and called milk «a white food», the best and the sacred one.
